Brookie Skillet Cookie

This brookie skillet cookie is everything you need and more! It’s made with a combination of both a rich and fudgy brownie batter and a delicious chocolate chip cookie dough, then baked to perfection and topped with vanilla ice cream as soon as it comes out of the oven. It’s crunchy on the outside and chewy and gooey on the inside! Every bite is to remember!

  • Brown sugar: The brown sugar is used in both the batters.

Ingredients

Brownies

  • 1 cup butter, melted

  • 1 1/4 cup brown sugar

  • 2 eggs

  • 1 tbsp vanilla extract

  • 1/2 cup Dutch process cocoa powder

  • 1 3/4 cups All-purpose flour

  • 2 tsp espresso powder

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 3/4 cup chocolate chips

Chocolate Chip Cookie Dough

  • 1/2 cup butter, melted

  • 1/4 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 egg

  • 2 tsp vanilla extract

  • 1 cup All-purpose flour

  • 1 tsp baking soda

  • 1/4 tsp baking powder

  • 1/4 tsp salt

  • 1/3 cup chocolate chips

Topping

  • Vanilla Ice cream

Instructions

Step 1

  • Preheat oven to 350°F (177C). Butter a 10-inch cast iron skillet. Set aside.

Step 2

  • For the brownies, mix in the brown sugar with the melted butter until mixture turns glossy (about 2 minutes). Add the eggs and vanilla extract, mixing until smooth.

Step 3

  • Add the flour, cocoa powder, espresso powder, baking soda, and salt. Mix until a soft dough forms. Gently fold in the chocolate chips. Set aside.

Step 4

  • For the chocolate chip cookie dough, with a whisk, beat butter, brown sugar and granulated sugar together until fluffy and mixture turns an off-white colour (about 2 minutes). Add the egg, and vanilla extract and mix until a smooth consistency.

Step 5

  • Add the flour, baking soda, baking powder, and salt. Mix until a soft dough forms. Add the chocolate chips until just combined. Set aside.

Step 6

  • Assembling the brookie skillet, add half the brownie batter to the prepared skillet and spread into an even layer. Next, use a medium size cookie scoop to evenly add from both the chocolate chip cookie dough and the rest of the brownie dough to create the brookie look.

Step 7

  • Bake for 35 to 45 minutes, or until the top of brookie skillet cookie has puffed up, and the center is still a little gooey. Let the brookie skillet cool for about 10–15 minutes before topping with ice cream. Enjoy!
