Caramel Apple Pie Bars

These caramel apple pie bars are perfect for you, if you are an apple pie lover, but don’t like doing all the work? They take all the delicious fall flavours of an apple pie, with a buttery shortbread crust, then filled with a cinnamon apple filling, sprinkled with a crunchy streusel topping and topped with the best homemade caramel sauce. The best part is that they are so quick and easy to make.

Tips for making Caramel Apple Pie Bars.

Shortbread Crust: bake the Shortbread Crust for around 15 minutes.

Streusel topping: After combining its ingredients, use cold and cubed butter.

Assembling: Turn up the oven to 350°F (177C) while you assemble the bars.

Baking: Bake the bars for 30–35 minutes, or until the streusel turns a golden brown colour.

Allow to cool for 15 minutes before placing in the fridge for at least 2 hours.

Ingredients

Shortbread crust

  • 1/2 cup butter, melted

  • 1/4 cup granulated sugar

  • 1 tsp vanilla

  • 1 1/4 cup all-purpose flour

Apple filling

  • 600-700 grams apples

  • 2 tbsp granulated sugar

  • 1 tsp lemon juice

  • 1 tsp cinnamon

  • 1/4 tsp cloves

Streusel

  • 2/3 cup oats

  • 1/4 cup brown sugar

  • 1/4 cup all-purpose flour

  • 1/4 cup butter, cold and cubed

  • 1/4 tsp cinnamon

Homemade Caramel Sauce

Instructions

Step 1

  • Preheat oven, to300°F (149C) Line a 8x8 square span with parchment paper on the bottom and all sides. Set aside.

Step 2

  • For the shortbread: In a medium size bowl, whisk the melted butter, granulated sugar and vanilla until combined (about 2 minutes). Add the four and mix. Transfer the shortbread crust to your prepared pan and gently flatten out into an even layer, and bake for around 15 minutes. While the crust bakes, make the filling.

Step 3

  • For the filling: Combine the sliced and peeled apples, granulated sugar, cinnamon, cloves and lemon juice. Set aside.

Step 4

  • For the streusel topping: Combine the oats, brown sugar, flour, cinnamon and mix until just combined. Next, add the cold and cubed butter and use a fork, or your hands, to break it. The mixture should resemble crumbs.

Step 5

  • Turn up the oven to 350°F (177C) while you assemble the bars. Start by placing the apple filling into an even layer over the warm crust, then sprinkles the streusel topping over the apple filling.

Step 6

  • Bake the bars for 30–35 minutes, or until the streusel turns a golden brown colour. Once done baking, allow to cool for 15 minutes before placing in the fridge for at least 2 hours.

Step 7

  • Once ready to serve, cut into 16 smaller bars, or 12 bigger bars. I recommend drizzling with homemade caramel sauce right before eating. Enjoy!
