These coffee cake cookies take all the flavors of an actually coffee cake. Think of a coffee cake made with a butter-based cake, filled with a cinnamon filling, topped with a sweet cinnamon streusel topping and sometimes even an icing drizzled on top. Served alongside a hot cup of coffee or tea. Well, these coffee cake cookies are made with a delicious cinnamon cookie base, topped with a cinnamon streusel topping placed in an indent made in the centre of the cookies and topped with a sweet icing that’s drizzled right on top.

Ingredients For Coffee Cake Cookies

  • Unsalted Butter

  • Brown & Granulated Sugar

  • Eggs

  • Vanilla Extract

  • All Purpose Flour

  • Cinnamon: Cinnamon is the key ingredient to make these coffee cake cookies.

  • Baking soda & Baking Powder

  • Salt

  • Powdered Sugar: Is the main ingredient for the icing.

  • Milk: Helps bind the powdered sugar together to make the icing.

Tips for making Coffee Cake Cookies?

  1. Streusel: The mixture of the Streusel should stick together, but should also crumble when you run it through your fingers.

  2. Wet Ingredients: Beat butter, brown sugar and granulated sugar together until fluffy and mixture turns an off-white color.

  3. Mix dry Ingredients together.

  4. Scooping: Use a 1,5 ounce cookie scoop, and gently press down the top of each cookie.

  5. Baking :Bake for 11 to 12 minutes.

  6. Cookies have to be cooled before slightly drizzle on the icing.

Ingredients

Cookie Dough

  • 2/3 cup butter, room temperature

  • 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 egg + 1 egg yolk

  • 2 tsp vanilla extract

  • 1 2/3 cup All-purpose flour

  • 1 1/2 tsp cinnamon

  • 3/4 tsp baking soda

  • 1/2 tsp baking powder

  • 1/4 tsp salt

Streusel

  • 3 tbsp butter

  • 3 tbsp brown sugar

  • 6 tbsp flour

  • 1/2 tsp cinnamon

  • Pinch of salt

Icing

  • 1/2 cup powdered sugar

  • 1 tbsp milk

Instructions

Step 1

  • Preheat oven to 350°F (177C). Line a baking pan with parchment paper and set aside.

Step 2

  • To make streusel, combine all the ingredients in a bowl, butter, brown sugar, flour, cinnamon and salt with a spoon or by hand. The mixture should stick together, but should also crumble when you run it through your fingers. If it’s not crumbling, add an additional 1 tbsp of flour and mix until it crumbles.

Step 3

  • With a whisk, beat butter, brown sugar and granulated sugar together until fluffy and mixture turns an off-white color (about 2 minutes). Add the egg, egg yolk and vanilla extract and mix until a smooth consistency.

Step 4

  • Add the flour, cinnamon, baking soda, baking powder and salt. Mix until a soft dough forms. Use a 1,5 ounce cookie scoop, and gently press down the top of each cookie. Using the back of a cookie scoop or your fingers, make an indent in the centre of the top of the dough. Sprinkle about 1 to 2 tbsp worth of the streusel on top of the cookie in the indent. Bake for 11 to 12 minutes.

Step 5

  • While the cookies bake, make the icing. Combine the powdered sugar and milk in a small bowl and mix until it’s smooth and a runny consistency. Once the cookies have cooled slightly, drizzle on the icing. Enjoy!
