  • 12 muffins

Ingredients

  • 1/2 cup vegetable oil

  • 1 cup granulated sugar

  • 2/3 cup Greek yogurt

  • 2/3 cup milk

  • 2 eggs

  • 2 tsp vanilla

  • 1 1/2 cup All-purpose flour

  • 3/4 cup cocoa powder

  • 1 cup chocolate chips

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

Instructions

Step 1

  • Preheat oven to 425F and line a muffin tin with 6 cupcake or muffin liners.

Step 2

  • In a large mixing bowl, combine the oil, milk, eggs, vanilla and Greek yogurt. Whisk until combined.

Step 3

  • Add the granulated sugar, flour, cocoa powder, baking powder, baking soda and salt. Mix until just combined. Do not over mix. Last, add the chocolate chips and mix a few times to evenly distribute them.

Step 4

  • Use a large ice cream scoop to divide the batter evenly between the 6 muffins tins. Bake at 425° for 5 minutes. After 5 minutes, while the muffins are still in the oven, reduce the temperature to 350° and bake for 15–16 minutes.

  • Allow to cool slightly before enjoying!
