What Are Red Velvet Brookies?
First what are Brookies? Brookies is a a combination of a fudgy brownie batter topped with delicious chocolate chip cookie dough and baked to perfection. Brookies can also be made into cookies, so it would be a cookies half brownie half chocolate chip cookie dough. Now…..what is red velvet Brookies? When I though about making red velvet Brookies, I knew I wanted to make regular Brookies, but change them up a little in an exciting way. These red velvet Brookies are made basically the exact same way as traditional Brookies, the only difference is that the brownie batter is red velvet and rich and decadent! So now that you know what Brookies are, more specifically red velvet Brookies, lets make them.
Ingredients For Red Velvet Brookies
Unsalted Butter
Brown & Granulated Sugar
Eggs
Vanilla Extract
Red food coloring
All Purpose Flour
Cocoa Powder
Vegetable Oil
Espresso Powder
Salt
Chocolate chips
How To Store Red Velvet Brookies?
These red velvet brownies should be stored in an airtight container at room temperature for up to a week. However, you can also store them covered in the fridge for up to 10 days, but I don’t think they will last that long!

Ingredients
3/4 cup butter
1 cup granulated sugar
1/4 cup brown sugar
2 eggs + 1 egg yolk
2 tsp vanilla
gel or liquid food coloring
1 cup All-purpose flour
1/4 cup cocoa powder
1/4 cup vegetable oil
2 tsp espresso powder
3/4 tsp salt
Chocolate Chip Cookie Dough
2 tbsp butter, softened
2 tbsp brown sugar
1/2 tbsp granulated sugar
1 egg yolk
1/4 tsp vanilla
3 tbsp All-purpose flour
1/4 tsp baking soda
1/4 tsp salt
2 tbsp chocolate chips
Instructions
Step 1
Preheat oven to 350F (180C). Line a 8x8 square pan with parchment paper and set aside.
Step 2
In a microwave-safe bowl, add butter, granulated sugar, and brown sugar. Microwave for 1.5 minutes, stir, then microwave for 30 more seconds. Stir until smooth. To the butter and sugar mixture, add in eggs, egg yolk, vanilla extract, salt. Whisk the mixture quickly for about 3 minutes. This is what creates he crackly top on the brownies.
Step 3
Add the flour, cocoa powder, espresso powder and salt. Slightly mix, then add the vegetable oil. Mix until combined. Pour the red velvet brownie batter in the prepared pan.
Step 4
For the cookie dough, Beat butter, brown sugar and granulated sugar until it’s fluffy or turns an off-white color (about 3 minutes). Add the egg yolk and vanilla extract and mix well. Add the flour, baking soda, and salt. Mix until a soft dough forms. Add chocolate chips and mix.
Step 5
Scoop pieces of the cookie dough and add on top of the red velvet brownie layer. Bake for 35 to 45 minutes, testing for doneness by inserting a knife into the center of the brookies beginning at 20 minutes. They will be done when the edges have set, but the knife is inserted into the middle and comes out with a bit of brookie batter onto it. Enjoy!
