  • 3/4 cup butter

  • 1 1/2 cup chocolate chips

  • 1 1/2 cup granulated sugar

  • 2 eggs + 1 egg yolk

  • 2 tsp vanilla extract

  • 2 tbsp vegetable oil

  • 3/4 cup cocoa powder

  • 1/2 cup All-purpose flour

  • 2 1/2 tsp espresso powder

  • 1 tsp salt

  • 1 1/2 cup mini marshmallows

Instructions

Step 1

  • Preheat oven to 350°F (180C). Line an 8x8 square pan with parchment paper on all sides. Place graham crackers in a single layer along the bottom of the pan. You may have to break the graham crackers into quarters to fit. Set aside.

Step 2

  • Place chocolate chips and butter in a medium saucepan and set over medium low heat. Once the butter and chocolate chips melt, remove from heat and add cocoa powder and mix.

Step 3

  • While the chocolate butter mixture cools, beat the eggs, granulated sugar, espresso powder, vanilla and vegetable oil together with a stand mixer/hand mixer until light fluffy and pale in color.

Step 4

  • Add the chocolate butter mixture to the egg mixture and use a rubber spatula to gently fold together. Lastly, add the flour and salt and fold the mixture until just combined.

Step 5

  • Pour brownie batter over graham crackers and spread into an even layer. Bake for 25 to 30 minutes or until a knife inserted into the center of the brownies comes out mostly clean. Transfer to a wire wrack.

Step 6

  • Allow the brownies to cool for 5 to 10 minutes, then add the mini marshmallows to completely cover the top. If wished, use a blowtorch to toast the mini marshmallows. If you don’t have a blowtorch, you can also place the brownies in the oven under the broiler for a minute or two, keeping an eye on it so they don’t burn.

Step 7

  • Place in the fridge to set for an hour before cutting into 9 large brownies. Make sure to wash your knife under hot water in between slices to assure clean cuts. Enjoy!
