Spooky Ghost Linzer Cookies
These cookies are a must this Halloween! Everything about these cookies is perfect, from the taste, to the smell to the amazing fun and festive looks. These are spooky ghost linzer cookies, made with a buttery soft and chewy cookie base, then filled with a delicious sweet and spooky strawberry jam filling in the centre topped with a dusting of powdered sugar before sandwiching the two cookies together! It really is a dream cookies!
Ingredients For Spooky Ghost Linzer Cookies
Unsalted Butter: Using unsalted butter allows you to fully control the amount of salt going into your cookies.
Powdered sugar: This recipe uses powdered sugar instead of granulated sugar to create a soft and melt in your mouth cookie.
Egg Yolk: A single egg yolk is used in this recipe to bind everything together.
Vanilla Extract: Will give the cookies a depth of flavor.
All Purpose Flour: The all-purpose flour is perfect for these cookies, it creates a tender cookie.
Salt: Any baked goods need salt. Salt is used to balance out the sweetness of any dessert.
Strawberry jam: To fill the cookies.
How To Make Spooky Ghost Linzer Cookies?
Whisk the butter, add powdered sugar until incorporated. Then add the egg yolk and vanilla extract.
Fold in the dry ingredients.
Roll out the dough into an even layer.
Use a ghost shape cookie cutter to cut out the dough.
Bake for about 12 to 14 minutes.
What Kind Of Jam Do I Use?
When using any type of jam, it’s very important to use high quality jam as it will really affect the final outcome of any dessert you make, especially these incredible cookies. If you’re feeling a little bit more fancy, you can go the extra step and make your own homemade jam with whatever fruit you want. That would also be delicious, however if you're trying to keep this recipe as easy and simple as possible than store bough jam is probably the way to go.
This recipe uses strawberry jam, however feel free to whatever flavor of jam you want/like. Any flavor will work, but I have also tried it with apricot jam………. OMG let me tell you it’s life changing. It’s by far one of my favorite and one of the best flavors of jam you can use to fill these cookies. They are absolutely delicious. You can also do half-and-half, half strawberry jam and the other half apricot, either way you will love it.
How To Store Spooky Ghost Linzer Cookies?
These spooky ghost linzer cookies should be stored at room temperature in an airtight container for up to 7 days, or they can be put in the fridge for up to 10 days. Either way, I don’t think they will end up lasting that long, as they are so delicious.
Serving size
Around 10 to 12 cookies (20 to 24 halves)
Ingredients
1 cup butter, room temperature
1 cup powdered sugar
1 egg yolk
1 tsp vanilla extract
2 cups All-purpose flour
1/4 tsp salt
1/2 cup strawberry jam
Instructions
Step 1
Line a baking pan with parchment paper and set aside. With a whisk, beat butter, and powdered sugar together until fluffy (about 2 minutes). Add the egg yolk, and vanilla extract and mix until a smooth consistency.
Step 2
Add the flour and salt. Mix until a soft dough forms. Flour your work surface as well as the rolling pin, (add a little extra flour at a time if needed). Roll the dough into an even layer to about 1/4 inch thickness.
Step 3
Use a ghost shaped cookie cutter, and cut out the cookies. Next, for only half the cookies, use a medium size open round piping tip and use the small side to cut out eyes for the ghost and use the other bigger side to cut out the mouth for the ghost. Place the cookies in the lined prepared baking pan. Repeat with remaining dough.
Step 4
Place the pan in the fridge for 15 to 20 minutes until mostly firm. While the cookies are in the fridge, preheat oven to 350°F (177C).
Step 5
Bake for 10 to 11 minutes, or until the cookies have turned an off-white color and have slightly puffed up. Once baked, remove from the oven and let them cool.
Step 6
Dust powdered sugar only over half the cookies with the cut out ghost face. Spread the jam in an even layer in the inside of each whole cookie. Gently sandwich them together with cut out ghost face. Enjoy devouring these!
