Barbie Cookies

Since the new Barbie movie just came out, the only right thing to do was make Barbie cookies. These Barbie cookies are made with a delicious, soft and chewy cookie, topped with the most perfect pink buttercream frosting, sprinkles and Barbie toppers that screams Barbie!

How to create the Barbie chocolate toppers?

Making these Barbie chocolate toppers seems hard, but their actually so easy and they bring these cookies to the next level! Start by printing out a Barbie word template and place under parchment paper. Next, get some white chocolate and pink food coloring. Began by melting the white chocolate in a microwave safe-bowl then adding the pink food coloring, mixing until a smooth consistency. Transfer the melted chocolate to a piping bag or a Ziploc bag with a small hole snipped in one corner. Hold the bag about 1-inch above the sheet and gently squeeze, tracing the design on the parchment paper. Squeeze with even pressure, but stop squeezing before you feel like you should as the chocolate will continue to spread. If there is any empty gaps use a toothpick to fill them in. Allow the toppers to set completely in the freezer until ready to use.

Only take the Barbie toppers out of the freezer when ready to use as they can melt fast especially in the heat.

How to store these cookies?

Store these cookies in the fridge for up to 14 days or keep at room temperature in an airtight container for up to a week.

Ingredients

  • 3/4 cup butter, room temperature

  • 1/4 cup brown sugar

  • 3/4 cup granulated sugar

  • 1 egg

  • 2 tsp vanilla

  • 1 3/4 cup All-purpose flour

  • 3/4 tsp baking soda

  • 1/4 tsp baking powder

  • 1/4 tsp salt

Frosting

  • 3/4 cup butter

  • 2 cups powder sugar

  • 3 tbsp heavy cream (or 2 tbsp milk)

  • 2 tsp vanilla

  • 1/4 tsp salt

Barbie chocolate topper

  • 1/2 cup white chocolate

  • Pink food coloring

Instructions

Step 1

  • For Barbie chocolate topper, print out a Barbie word template and place under parchment paper. Then, in a microwave safe-bowl melt the white chocolate and add the pink food coloring, mix until smooth. Transfer the melted chocolate to a piping bag or a Ziploc bag with a small hole snipped in one corner. Step 2

  • Preheat oven to 350*F (180C). Line a baking pan with parchment paper and set aside.

Step 3

  • With a whisk, beat butter, brown sugar and granulated sugar together until fluffy and mixture turns an off-white color (about 2 minutes). Add the egg and vanilla extract and mix until a smooth consistency.

Step 4

  • Add the flour, baking soda, baking powder and salt. Mix until a soft dough forms.

Step 5

  • Use a 1,5 ounce cookie scoop. Slightly press down the top of the cookie and bake for 10 to 11 minutes, or until the centre has puffed up.

Step 6

  • For the frosting, beat the butter on medium-high until mixture turns off-white while scraping down the sides of the bowl (about 5 minutes). Then slowly add the powdered sugar until incorporated, mixing on low increasing the speed to high. Add heavy cream, vanilla and salt. Whip the mixture until fluffy. Finally, dye the frosting a light pink.

Step 7

  • Add frosting to a piping bag fitted with an open round tip and frost the cookies. Add some pink, white and silver sprinkles. Lastly add the Barbie chocolate topper. Enjoy!
