Cinnamon Roll Blondies

Take all the delicious flavors of a chewy, and soft cinnamon roll and turn them into these incredible cinnamon roll blondies. These cinnamon roll blondies are made with a buttery blondie base, swirled with a cinnamon sugar in the batter, and topped with a cream cheese icing.

Ingredients For Cinnamon Roll Blondies

  • Melted Butter: Using melted butter will create a more soft and chewy blondie. Make sure the butter is melted and cooled before using.

  • Brown Sugar & Granulated Sugar: This recipe uses both brown sugar and granulated sugar in the blondies and just brown sugar for the cinnamon sugar.

  • Eggs: Using 2 eggs and an extra egg yolk will help your blondies become chewy. Eggs will bind your batter together

  • Vanilla Extract: Will give the blondies a depth of flavor.

  • All Purpose Flour: The all purpose flour is perfect for these blondies. As it creates a tender blondie.

  • Cinnamon: Using cinnamon will bring all those fall flavors of a cinnamon roll.

  • Baking powder: It’s a leavening agent that will give the blondies the perfect rise.

  • Salt: Any baked goods need salt. Salt is used to balance out the sweetness of any dessert.

  • Cream cheese: The cream cheese is the base for the cream cheese icing.

  • Powdered Sugar: The powdered sugar is used to make the icing, to add on top of the cooled blondies.

  • Milk: Milk is used in the icing.

How To Make Cinnamon Roll Blondies?

  1. Whisk wet Ingredients together in a large mixing bowl.

  2. Use melted butter.

  3. Mix dry Ingredients together.

  4. Baking: Bake for 30 to 35 minutes. The center will still be a little doughy, but they will continue to bake as they cool in the hot pan.

Ingredients

  • 1 cup butter, melted and cooled

  • 2/3 cup granulated sugar

  • 1 cup brown sugar

  • 2 eggs + 1 egg yolk

  • 1 tbsp vanilla extract

  • 2 1/4 cups All-purpose flour

  • 2 tsp cinnamon

  • 3/4 tsp baking powder

  • 1/2 tsp salt

Cinnamon Sugar

  • 1/3 cup brown sugar

  • 3 tbsp cinnamon

Icing

  • 3 tbsp cream cheese

  • 3/4 cup powdered sugar

  • 1 to 2 tbsp milk

  • 1 tsp vanilla

  • Pinch of salt

Instructions

Step 1

  • Preheat oven to 350°F (177C) and line an line an 8x8 square pan with parchment paper on all sides and set aside. Set aside.

Step 2

  • In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Mix until glossy (about 2 minutes). Add the eggs, egg yolk and vanilla extract. Whisk until combined.

Step 3

  • Mix the flour, cinnamon, baking powder, and salt together. Fold the wet ingredients into the dry and mix until just combined. Do not over mix.

Step 4

  • Transfer the batter in to your prepared pan. To make the cinnamon and sugar, combine the brown sugar, and cinnamon together. Sprinkle the cinnamon sugar over the batter. Use a butterknife to swirl it around and create big swirls.

Step 5

  • Bake for 30 to 35 minutes, or until the center has puffed up and the edges has set.

Step 6

  • To make the icing, combine the cream cheese, powdered sugar, milk, vanilla extract and salt together, whisk until a smooth and glossy consistency.

Step 7

  • Once the blondies are cooled, drizzle the cream cheese icing on top. Cut into 16 squares. Enjoy!
