Double Chocolate S’mores Cookies

Serving Size:

  • Around 16 cookies

Ingredients

  • 3/4 cup butter, softened

  • 3/4 cup brown sugar

  • 1/3 cup granulated sugar

  • 1 egg + 1 egg yolk

  • 2 tsp vanilla extract

  • 1 1/4 cup All-purpose flour

  • 1/2 cup cocoa powder

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup mini marshmallows

  • 1/2 cup chocolate chips

  • 3/4 cup crushed graham crackers (about 7 graham crackers)

Instructions

Step 1

  • Preheat oven to 350F (180C). Line a baking pan with parchment paper and set aside.

Step 2

  •  Beat butter until its fluffy or turns an off-white color (about 3 minutes). 

Step 3

  • Add in the brown sugar and granulated sugar and mix until fluffy (about 2 minutes).

Step 4

  • Add the egg, egg yolk and vanilla extract and mix well. 

Step 5

  •  Add the flour, cocoa powder, baking soda, and salt. Mix until a soft dough forms.

Step 6

  •  Add the chocolate chips, marshmallows and crushed graham crackers to the dough. Mix until combined.

Step 7

  •  Use a 1,5 ounce cookie scoop. Bake for 10 minutes, or until the edges are slightly golden.
