Ingredients
3/4 cup butter
1 1/4 cup brown sugar
1/4 cup granulated sugar
2 eggs + 1 egg yolk
2 tsp vanilla extract
2 tbsp vegetable oil
1 cup cocoa powder
1 /4 cup All-purpose flour
2 tsp espresso powder
3/4 tsp salt
Chocolate Chip Cookie Dough
3/4 cup butter
3/4 cup brown sugar
1/4 cup granulated sugar
1 egg
2 tsp vanilla extract
1 1/2 cup All-purpose flour
1 tsp baking soda
3/4 cup chocolate chips
Instructions
Step 1
Preheat oven to 350F (180C). Line a 8x8 square pan with parchment paper and set aside.
Step 2
In a microwave-safe bowl, add butter, granulated sugar, and brown sugar. Microwave for 1.5 minutes, stir, then microwave for 30 more seconds. Stir until smooth.
Step 3
To the butter and sugar mixture, add in eggs, egg yolk, vanilla extract, salt. Mix until combined.
Step 4
Add the flour, cocoa powder, and espresso powder. Slightly mix, then add the vegetable oil. Mix until combined.
Step 5
Pour the brownie batter into an even layer into the prepared pan and set aside while making the cookie dough.
Step 6
For the cookie dough, Beat butter until it’s fluffy or turns an off-white color (about 3 minutes).
Step 7
Add in the brown sugar and granulated sugar and mix until fluffy (about 2 minutes).
Step 8
Add the egg and vanilla extract and mix well.
Step 9
Add the flour, baking soda, and salt. Mix until a soft dough forms. Add chocolate chips and mix.
Step 10
Scoop pieces of the cookie dough and add on top of the brownie layer. Use a knife to swirl the brownie and cookie dough together.
Step 11
Bake for 35 to 45 minutes, testing for doneness by inserting a knife into the center of the brookies beginning at 20 minutes. They will be done when the edges have set, but the knife is inserted into the middle and comes out with a bit of brookie batter onto it.
