Nutella Stuffed Chocolate Chip Cookies

Ingredients
3/4 cup butter
3/4 cup brown sugar
1/3 granulated sugar
1 egg + 1 egg yolk
1 tbsp vanilla
1 1/2 cup All-purpose flour
3/4 tsp baking soda
1 tsp salt
1 cup dark chocolate chips
Instructions
Step 1
Scoop about a tbsp worth of Nutella into balls onto a parchment paper lined tray. Place in the freezer for 30 minutes to an hour.
Step 2
To brown the butter, put it over medium low heat, stirring constantly, until the butter begins to foam and turns a golden brown. It will start to have a nutty aroma to it. Take the butter off the heat and let it cool.
Step 3
To the cooled brown butter, add the brown sugar and granulated sugar and mix until combined.

Add the egg, egg yolk and vanilla. Mix until smooth.
Step 5
Add the flour, baking soda and salt. Mix until a soft dough forms. Then add the chocolate chips. Mix until combined.
Step 6
Once the Nutella balls are frozen well, with a cookie scoop, scoop out about 3 tbsp of the cookie dough, flatten out the cookie in your palm and place one Nutella ball into the centre. Fold the cookie around the Nutella ball and roll in your hand until secured in the centre.
Step 7
Chill the stuffed cookie dough in the fridge for at least 30 minutes. Giving the dough time to rest will allow the flour to absorb and the flavors to settle in. This creates a rich and gooey centre with crunchy edges. If you bake the cookies right away, you will get less flavors and the cookie will spread a little more. They will still taste delicious, but they will be much tastier if you pop them in the fridge for a little!

When ready to bake, preheat the oven to 350F (180C). Line a baking pan with parchment paper. Bake for 11 minutes, or until the edges are slightly golden brown and the centre has puffed up but is still gooey.
Step 9
Let the cookies cool completely before eating, I recommended serving them with a glass of cold milk. Enjoy!
