Double Chocolate Skillet Cookie

Ingredients
1 cup butter, melted
1 1/4 cups brown sugar
2 eggs
1 tbsp vanilla
2 1/2 tsp espresso powder
1/2 cup cocoa powder
1 3/4 cup All-purpose flour
1 tsp baking soda
1 tsp salt
3/4 cup chocolate chips or chocolate chunks
Instructions
Step 1
Preheat oven to 350F (180C). Butter, a 10-inch cast iron skillet. Set aside.
Step 2
Mix the melted butter with the brown sugar until a smooth and glossy (about 3 minutes).
Step 3
Add the eggs and vanilla extract and mix well. (about 2 minutes).
Step 4
Add the flour, cocoa powder, espresso powder, baking soda, and salt. Mix until a soft dough forms.
Step 5
Gently fold in the chocolate into the dough. Do not over mix!
Step 6
Add the cookie dough into your prepared skillet and gently pat it down into an even layer all the way around.
Step 7
Bake for 20 to 30 minutes, or until the edges have set but the centre is still gooey. Let it cool for about 10-15 minutes before adding the ice cream and eating!
