What Is A Single Serve Brookie Cookie?
Honestly, anything can be made into a single serve dessert. Single serve recipes are great if you don’t want to make a big batch of cookie dough and or to have a ton of cookies lying around everywhere. This small batch double chocolate cookie recipe makes 1 big cookie or 2 cookies. Either way, they’re soft, fudgy and absolutely delicious.
Ingredients For Single Serve Brookie Cookie
You’ll only need these 9 ingredients to make this fudgy single serve brookie cookie. You’ll need the usual ingredients for cookies, which you probably already have. The only difference is that the amount is a lot smaller.

Brown Sugar
Granulated Sugar
Egg
Vanilla Extract
Cocoa Powder
All Purpose Flour
Baking soda
Salt

Ingredients
Chocolate chip cookie dough
1 tbsp butter, room temperature
1 tbsp brown sugar
1/2 tsp granulated sugar
Half an egg yolk
1/2 tsp vanilla extract
2 tbsp All-purpose flour
1/8 tsp baking soda
1/8 tsp salt
2 tbsp chocolate chips
Brownie cookie dough
1 tbsp butter, room temperature
2 tbsp brown sugar
Half an egg yolk
2 tbsp All-purpose flour
1 tbsp cocoa powder
1/4 tsp baking soda
1/8 tsp salt
2 tbsp chocolate chip
Instructions
Step 1
Preheat oven to 350°F (177C). Line a baking pan with parchment paper and set aside.
Step 2
For the chocolate chip cookie dough, in a small bowl, with a whisk, beat butter, brown sugar and granulated sugar together until fluffy and mixture turns an off-white colour (about 1 minutes). Separate an egg yolk from an egg (you will use the other half of the egg for the brownie dough). Take half the egg yolk mixture and mix into the butter and sugar mixture along with the vanilla extract.
Step 3
Add the flour, baking soda, and salt. Mix until a soft dough forms. Fold in chocolate chips until evenly distributed. Set the cookie dough aside.
Step 4
For the brownie cookie dough, in a small bowl, with a whisk, beat butter and brown sugar together until fluffy and mixture turns an off-white colour (about 1 minutes). Take the remaining half of the egg yolk mixture and mix to the butter and sugar mixture along with the vanilla extract.
Step 5
Add the flour, cocoa powder, baking soda, and salt. Mix until a soft dough forms. Fold in chocolate chips until just combined.
Step 6
Take both the chocolate chip cookie dough and the brownie cookie dough and press them together. Gently press the cookie down. Bake for 11 minutes, or until the cookie has spread, and the center is still gooey. Let cool for 5 minutes. Enjoy!
