1/2 cup butter, melted
1 cup granulated sugar
2 eggs
2 tsp vanilla extract
1/3 cup milk
1/2 cup yogurt
2 1/4 cups + 2 tbsp All-purpose flour
2 tsp baking powder
1 tsp salt
2 cups fresh blueberries
Streusel Topping
1/3 cup butter
4 tbsp granulated sugar
2 tbsp brown sugar
3/4 cup all-purpose flour
Pinch of salt
Instructions
Step 1
Preheat oven to 425°F and line a muffin tin with 12 cupcake or muffin liners. Set aside. Next, in a bowl mix in the 2 tbsp of flour with the blueberries. Set aside.
Step 2
In a large mixing bowl, combine the melted butter, granulated sugar, yogurt, milk, eggs, and vanilla extract. Whisk until combined (about 2 minutes).
Step 3
Add the flour, baking powder, baking soda and salt. Mix slightly, but leave streaks of flour. Fold in the blueberries until just combined. Don’t over mix. Scoop batter into prepared muffin tins, filling them almost full.
Step 4
To make the streusel topping, use a fork to combine all the ingredients together. Don’t over mix. Spoon crumbs evenly on top of the muffins.
Step 5
Bake at 425° for 5 minutes. Keeping the muffins in the oven, reduce the temperature to 350° and bake for an additional 17 to 18 minutes. Allow the muffins to cool before devouring! Enjoy!
