Brookie Cookies

Serving size:

Ingredients:

Cookie part

  • 3/4 cup butter, softened

  • 3/4 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 egg

  • 2 tsp vanilla

  • 1 1/2 cup All-purpose flour

  • 1 tsp baking soda

  • 3/4 cup chocolate chips

Brownie part

  • 3/4 cup butter, softened

  • 3/4 brown sugar

  • 1/4 cup granulated sugar

  • 1 egg

  • 2 tsp vanilla

  • 1 1/4 cup All-purpose flour

  • 1/4 cup cocoa powder

  • 1 tsp baking soda

  • 1 tsp espresso powder

  • 3/4 cup chocolate chips

Instructions

Step 1

  • Preheat oven to 350F (180C). Line a baking pan with parchment paper and set aside.

Step 2

  • Cookie part: Beat butter until it’s fluffy or turns an off-white colour (about 3 minutes).

Step 3

  • Add in brown sugar and granulated sugar and mix until fluffy (about 2 minutes).

Step 4

  • Add the egg and vanilla extract and mix well.

Step 5

  • Add the flour, and baking soda. Mix until a soft dough forms. Then add the chocolate chips. Mix until combined.

Step 6

  • Brownie part: Beat butter until it’s fluffy or turns an off-white colour (about 3 minutes).

Step 7

  • Add in brown sugar and granulated sugar and mix until fluffy (about 2 minutes).

Step 8

  • Add the egg and vanilla extract and mix well.

Step 9

  • Add the flour, cocoa powder, baking soda, and espresso powder. Mix until a soft dough forms. Then add the chocolate chips. Mix until combined.

Step 10

  • Use a 0.5 ounce cookie scoop to scoop from the cookie part and brownie part. Add both cookie parts together. Bake for 11 - 13 minutes, or until the edges are slightly golden.
