Brown Butter Brownies

The only thing better than a brownie is a rich, fudgy brownie made with brown butter. These brownies have a beautiful crackly top and are a crowd pleasure!

What are brown butter brownies?

Brown butter brownies are brownies made with brown butter instead of regular butter! The brown butter creates a rich, nutty flavor that takes the brownies to a whole new level. The brown butter is the perfect key to enhance the rich chocolate flavor. In some brown butter sweets, you can really taste the brown butter however, you’ll barely taste it in here because the chocolate has a stronger and extensive flavor. The brown butter just adds the perfect flavor that will amaze your taste buds and make the brownies taste 10x better.

What is brown butter?

Brown butter is butter that has been melted and cooked until the milk solids turn brown. As the butter heats up, the water in the butter evaporates, and the milk solids begin to caramelize. It happens by just cooking the butter a tiny bit pas the melting stage. By doing this, it creates a nutty flavor and aroma.

How to make brown butter?

So now that we know what brown butter is and what it does……let’s make it. To make brown butter, start by melting unsalted or salted butter in a small saucepan over medium low heat. Once the butter is melted, It will start to bubble, continue to cook it by stirring occasionally, until it begins to turn golden brown. It will start to have a nutty aroma. It’s important to watch the butter because it’s very easy to go from brown to burnt very quickly. Once the butter is browned, remove from heat to stop the cooking process.

Ingredients

  • 2/3 cup butter

  • 1 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 3 eggs

  • 2 tsp vanilla extract

  • 2/3 cup Dutch-process cocoa powder

  • 1 /4 cup All-purpose flour

  • 1/2 tsp salt

  • 1/3 cup chopped chocolate

Instructions

Step 1

  • Preheat oven to 350*F (180C). Grease and line a 8x8 square pan with parchment paper on all sides and set aside.

Step 2

  • Place the butter in a small saucepan and set over medium low heat. Allow it to melt and then stir with a silicone spatula as it starts to bubble. Stir the butter every 10 to 15 seconds. At first, the butter will melt and foam, then with time the foam bubbles will get smaller and the butter will start to get a warm nutty aroma.

Step 3

  • Once the butter turns brown, add in the cocoa powder and quickly whisk to combine. Allow the mixture to bubble for 30 to 45 seconds, then remove from heat and set aside.

Step 4

  • While the chocolate butter mixture cools, beat the eggs, vanilla and brown sugar together with a stand mixer/hand mixer until light and fluffy and pale in color.

Step 5

  • Add the chocolate butter mixture to the egg mixture and use a rubber spatula to gently fold together.

Step 6

  • Add the flour and salt and fold the mixture until just combined. Lastly, fold in the chopped chocolate.

Step 7

  • Transfer the mixture into the prepared baking pan and bake for roughly 25 to 28 minutes, testing for doneness by inserting a knife into the center of the brownies. The brownies will be done when the edges have set, but when the knife inserted into the centre comes out with a little brownie batter on to it. Enjoy!
