Ingredients For Cosmic Brownie Mug Cake

  • Brown & Granulated Sugar: This recipe uses a combination of both sugars to ensure a soft and chewy brownie.

  • Baking Powder: It’s a leavening agent.

  • Vanilla Extract: Gives a depth of flavor.

  • Milk: I used regular milk, but almond milk would work too.

  • Vegetable Oil: It keeps the brownies very moist and tender.

  • Chocolate Chips: The type of chocolate used makes a huge difference in the final outcome of your baked goods, so make sure to use high quality chocolate chips.

  • Heavy cream: The heavy cream is used to make the chocolate ganache.

Tips For Making This Recipe

  • Measure the flour correctly. If too much flour is added to the recipe, it will result in a less soft, moist and fudgy brownie.

  • Do not over mix the batter, it will lead to a tough brownie.

  • Do not overcook the brownie. Every microwave is different in power, so the time given might be too little or too much depending on your microwave. Keep that in mind.

  • The center might seem a little gooey once taken out of the oven, don’t worry as the center will set once the brownie is removed from the microwave and is cooling down.

Ingredients

  • 4 tbsp All-purpose flour

  • 4 tbsp Dutch processed cocoa powder

  • 2 1/2 tbsp granulated sugar

  • 1/2 tbsp brown sugar

  • Pinch of salt

  • 1/2 tsp baking powder

  • 1 tsp vanilla extract

  • 6 tbsp milk

  • 3 tbsp vegetable oil

Chocolate Ganache

  • 1/4 cup semi-sweet chocolate chips

  • 1 1/2 tbsp heavy cream

Topping

  • Chocolate rainbow sprinkles

Instructions

Step 1

  • In a 12 to 14 ounce microwave-safe mug combine flour, cocoa powder, granulated sugar, brown sugar, salt and baking powder. Mix until well combined. Add only 4 tbsp of the milk, vegetable oil and vanilla extract. Stir until almost combine, then add the remaining 2 tbsp of milk. Mix until glossy and smooth.

Step 2

  • Place the mug in the microwave and microwave on high power for 2 to 2.5 minutes. Starting at 1 minutes, checking on the brownie and continuing to microwave for the remaining time. The brownie should have risen and still look slightly gooey on top. Let the brownie slightly cool while you make the chocolate ganache.

Step 3

  • To make the chocolate ganache, heat up heavy cream for 30 to 65 seconds and pour over chocolate chips. Let sit for 3 minutes before mixing until smooth. Pour the chocolate ganache over the brownie mug cake and smooth out to cover the top. Top with chocolate rainbow sprinkles. Enjoy!
