Double Chocolate Skillet Cookie

Ingredients

  • 1 cup butter, melted

  • 1 1/4 cups brown sugar

  • 2 eggs

  • 1 tbsp vanilla

  • 2 1/2 tsp espresso powder

  • 1/2 cup cocoa powder

  • 1 3/4 cup All-purpose flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 3/4 cup chocolate chips or chocolate chunks

Instructions

Step 1

  • Preheat oven to 350F (180C). Butter, a 10-inch cast iron skillet. Set aside.

Step 2

  •  Mix the melted butter with the brown sugar until a smooth and glossy (about 3 minutes). 

Step 3

  • Add the eggs and vanilla extract and mix well.  (about 2 minutes).

Step 4

  •  Add the flour, cocoa powder, espresso powder, baking soda, and salt. Mix until a soft dough forms.

Step 5

  • Gently fold in the chocolate into the dough. Do not over mix!

Step 6

  •  Add the cookie dough into your prepared skillet and gently pat it down into an even layer all the way around.

Step 7

  • Bake for 20 to 30 minutes, or until the edges have set but the centre is still gooey. Let it cool for about 10-15 minutes before adding the ice cream and  eating!
