No Bake Oreo Cheesecake Bars

Ever craved a cheesecake but, never wanted to go through the whole process of baking them!? Well what if I told you these are no bake Oreo cheesecake bars!……………yup these no bake Oreo cheesecake bars are made with an Oreo crust, fluffy and delicious cream cheese and whipped cream filling and topped with Oreos!

There’s so much reasons to love this recipe, its not only easy and super quick to make but, it only requires 6 ingredients!

  • Oreos the main ingredient for these delicious o bake Oreo cheesecake bars

  • Butter holds together the Oreo crust

  • Cream cheese it might be a no bake cheesecake, however, it would be the same without the cream cheese.

  • Heavy cream It’s a key ingredient to any no bake cheesecake. It gives the best texture and volume with the whipped cream cheese.

  • Vanilla Extract for a rich flavour

  • Powdered sugar though this recipe requires a few tbsp, it’s there just to balance out the tanginess from the cream cheese, since the Oreos cookies are pretty sweet on their own.

Why use cold heavy cream?

Using cold heavy cream straight out of the refrigerator, allows for maximum volume and the best texture. When whipping cream small air bubbles start to form. Therefore, when whipping the cold heavy cream the bubbles are held in place by tiny particles of solid fat witch eventually expands into airy and light peeks. Chilling the mixing bowl and beaters is another great way to help ensure that the cream stays cold through out the whipping process.

Never use room temperature heavy cream when whipping it, as the fats softens can’t trap air bubbles so it ends up collapsing.

How to store no bake Oreo cheesecake bars?

Store no bake Oreo cheesecake bars in an airtight container in the fridge for up to a week! They should be in the fridge at all time if not devouring, to keep their shape as they can melt fast in the heat.

Ingredients

The crust

  • 28 Oreos

  • 1/4 cup butter, melted

The Oreo Cheesecake

  • 2 cup cream cheese, room temperature

  • 3/4 cup heavy cream, cold

  • 3 tbsp powder sugar

  • 2 tsp vanilla

  • 8 Oreos, chopped

Toppings

  • Oreo crumbs

Instructions

Step 1

  • Line an 8x8 square pan with parchment paper on all sides and set aside.

Step 2

  • For the crust, add the 28 Oreos in a food processor. Pulse until everything is in crumbs. Add the melted butter, then continue to pulse until incorporated. Transfer the mixture into the prepared baking pan and press down into an even layer. Place the crust in the fridge for at least 20 minutes or until finished making the cheesecake layer.

Step 3

  • In a large mixing bowl, cream together the cream cheese and powdered sugar until light and fluffy (about 3-4 minutes). Set aside.

Step 4

  • In a mixing bowl, beat the heavy cream on medium-high speed until the stiff peeks form. (about 4-minutes)

Step 5

  • Gently fold the whipped cream cheese mixture into the whipped heavy cream. Fold in 1/3 of the whipped cream cheese mixture and mix, then add the second 1/3 and mix, finally add the remaining cream cheese mixture. Now, fold in the crushed Oreos leaving some to sprinkle on top. Spread into an even layer over the Oreo crust.

Step 6

  • Place the the pan back in the fridge for at least 1 1/2 hour before devouring. It’s best to keep them chilled as long as possible for the best outcome. Cut into 9 bars. Enjoy!
