Red Velvet Oreo Cookies

Ingredients
3/4 butter, softened
3/4 cup brown sugar
1/4 cup granulated sugar
1 egg
2 tsp of vanilla extract
1 1/4 cup All-purpose flour
1/4 cup cocoa powder
1 tsp baking soda
1/4 tsp salt
1 tsp espresso powder
10 Oreos, chopped up
1/2 cup white chocolate chips
Instructions
Step 1
Preheat oven to 350F (180C). Line a baking pan with parchment paper and set aside.
Step 2
Beat butter until it’s fluffy or turns an off-white colour. (About 3 minutes).
Step 3
Add in the brown sugar and granulated sugar and mix until fluffy (about 2 minutes).
Step 4
Add the egg and vanilla extract and mix well.
Step 5
Add the flour, cocoa powder, baking soda, salt, and espresso powder. Mix until a soft dough forms.
Step 6
Add the Oreos and white chocolate chips to the dough. Mix until combined.
Step 7
Use a 1,5 ounce cookie scoop. Bake for 12 minutes, or until the edges are slightly golden.
